Narthangai or citron is a citrus fruit variety predominantly used for the preparation of pickle recipes which goes well with hot steaming boiled rice and curd. Matured citrons are sliced or chopped to small-sized pieces, salt is applied for taste and keeps it fresh for long periods. Turmeric powder is also used to enhance the flavor. In the case of a spicy Narthangai pickle, red chili powder is used for the taste.
